Jen's Potato Soup

Jen's Potato Soup


2-28 oz. can crushed tomatoes, 1/2 or whole container of Chili Soup mix, 1 lb cooked ground sirloin, 4-5 cups of your favorite beans & 1 chopped onion.  Simmer low 1 hour +.
 Makes 1-2 large pots.


Mix half container with 4 med-lg diced potatoes, 1 minced lg carrot, 1 med diced onion or 1-2 diced leeks, 4 cups of chicken or vegetable broth, 2 T of real butter. Bring to boil then simmer until vegetables are desired tenderness. For a creamy soup option: whisk together 1/2 cup sour cream & 1/2 cup of milk & stir into soup once cooled. Optional: stir in 1 cup shredded cheddar cheese & top with crumbled crisp bacon. Makes an approx 6-8 cup pot of soup twice.

    We just made this soup tonight, easily one of the most delicious cream potato soups we've ever had! We usually have to adjust ingredients or spices but this one was perfect, highly recommend it!
